Coconut Mango Raw Energy Bars

Ingredients:

2 Cups of frozen or fresh mango chunks

1 Cup of frozen or fresh coconut chunks

1 Cup of pre-soaked Raw Walnuts (soak for 6+ hrs & rinse & drain)

½ cup shredded coconut flakes

½ cup maple syrup

½ teaspoon sea salt

 

Directions:

Blend together in food processor. I use Hamilton Beach Food Processor.

Line a 9X9 glass pan with wax paper.

Spray with nonstick spray

Place in freezer for 5 hours

 

Tips:

– Can take out of freezer at 2 hrs and cut. Then place back in freezer.

–  Store in freezer.

– Can roll into balls and freeze.

– If you like is sweeter, add in raw cane sugar or more maple syrup.

– Measurements do not need to be exact. Just have mixture “cookie dough” consistency.
